Purposes and Program:
In this course you can learn all the new pastry tendencies. In fact, during this course the Chef teacher will show how prepare several kind of modern cakes, made up of biscuit, dacquoise, mousse, Bavarian cream, mirror-glaze and often garnished in minimalist and polished way.
There will also be traditional cakes, reexamined and realized with the classic Italian taste criteria still garnished with extreme attention and refinement, always taking into consideration lab’s production needs.
During the course a very important part will be dedicated to line of production organization and how to best use all the tools at disposal, particularly blast-chilling and storage processes both of finished products and their various preparation steps.
